Braten oder Schnitzelfleich nennen sie es. Dem Preis nach wohl nicht das Topst\u00fcck, aber super mager. Ich mag keine Schnitzel. Viel zu schade f\u00fcr so ein St\u00fcck. Also machte ich es wie fast immer: Auf dem Grill scharf anbraten und dann indirekt garen bis 60\u00b0C im Kern. Der Gasgrill hat dann noch ca. 150\u00b0C und es dauert komplett etwa eine 3\/4 Stunde. Am Schluss noch  etwas ruhen lassen, damit der blutige Saft entweicht und die Tranchen sch\u00f6n rosa sind. Total einfach und super lecker. Dazu machte ich vorab eine Wildrahmsauce mit Champignons.<\/p>\n\n\n\n<p><strong>Hier meine Rodolfo Fleischmarinade, die ich f\u00fcr alles Fleisch am St\u00fcck verwende:<\/strong><\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>wenig Essig<\/li>\n\n\n\n<li>wenig Senf<\/li>\n\n\n\n<li>fl\u00fcssiger Honig oder Ahornsirup<\/li>\n\n\n\n<li>1 gepresste Knoblauchzehe<\/li>\n\n\n\n<li>Pfeffer und\/oder Chili (z.B. Piment d&#8217;Espelette)<\/li>\n\n\n\n<li>frische gr\u00fcne Kr\u00e4uter (heute aus dem Garten: Schnittlauch, Oregano, Thymian, Salbei)<\/li>\n\n\n\n<li>wenig Paprikapulver<\/li>\n\n\n\n<li>wenig Chetchup<\/li>\n\n\n\n<li>wenig Sojasauce<\/li>\n<\/ul>\n\n\n\n<p>Die Marinade muss man vor dem grillen unbedingt mit K\u00fcchenpapier gut abtupfen, sonst gibt es Flammen auf dem Grill!<\/p>\n\n\n\n<p><strong>Und dies meine Wildrahmsauce:<\/strong><\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 dl Wildfond bzw. 2 Essl\u00f6ffel Wildfond-Konzentrat aufl\u00f6sen<\/li>\n\n\n\n<li>2 dl Rotwein<\/li>\n\n\n\n<li>3 Essl\u00f6ffel gekochte Preiselbeeren im Glas<\/li>\n\n\n\n<li>2 dl Saucenhalbrahm (Rama)<\/li>\n\n\n\n<li>Maizena express<\/li>\n\n\n\n<li>Salz, Pfeffer<\/li>\n\n\n\n<li>optional: 3 Champignons pro Person und eine halbe Zwiebel<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Wein und Wildfonds in einer kleinen Pfanne auf die H\u00e4lfte einkochen.<\/li>\n\n\n\n<li>Rahm zugeben und kurz k\u00f6cheln<\/li>\n\n\n\n<li>Preiselbeeren zugeben und k\u00f6cheln<\/li>\n\n\n\n<li>Mit Salz und Pfeffer abschmecken<\/li>\n\n\n\n<li>Maizena unterr\u00fchren und k\u00f6cheln bis die gew\u00fcnschte S\u00e4migkeit erreicht ist<\/li>\n\n\n\n<li>optional:\n<ul class=\"wp-block-list\">\n<li>die Champignons waschen, r\u00fcsten, trocknen und in d\u00fcnne Scheiben schneiden<\/li>\n\n\n\n<li>1\/2 Zwiebel klein schneiden<\/li>\n\n\n\n<li>beides im Oliven\u00f6l in der Bartpfanne sachte d\u00fcnsten<\/li>\n\n\n\n<li>der Sauce kurz vor Schluss
