Ein perfektes Vegi-Menu oder auch als Beilage bei einem Buffet<\/p>\n\n\n\n<p><strong><u>Linsensalat mit Randen<\/u><\/strong><\/p>\n\n\n\n<p>Vegi (f\u00fcr 4 Personen)<strong><u><\/u><\/strong><\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>200g Linsen (zum schnell kochen in ca. 30 Minuten, ohne einweichen)<\/li>\n\n\n\n<li>ca. 300g Randen (rote Beete) gekocht und gew\u00fcrfelt<\/li>\n\n\n\n<li>1 grosse Karotte<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>1dl Weisswein<\/li>\n\n\n\n<li>3dl Wasser<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Chilipulver (z.B. Piment d\u2019Espelette)<\/li>\n\n\n\n<li>1 Schuss Weissweinessig<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Zitronensaft<\/li>\n\n\n\n<li>frischer Thymian<\/li>\n\n\n\n<li>frische Minze<\/li>\n\n\n\n<li>Petersilie<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Karotte in kleine W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Frische Gew\u00fcrze klein hacken.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einer kleinen Bartpfanne im Oliven\u00f6l die Zwiebeln und den Knoblauch and\u00fcnsten.<\/li>\n\n\n\n<li>Dann Karotten, Linsen, und Chilipulver beigeben. Kurz mitd\u00fcnsten.<\/li>\n\n\n\n<li>Mit 3dl Wasser abl\u00f6schen und zugedeckt 20 Minuten leicht k\u00f6cheln. Dazwischen r\u00fchren.<\/li>\n\n\n\n<li>Dann beigeben:\n<ul class=\"wp-block-list\">\n<li>1dl Weisswein<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Weiter k\u00f6cheln und r\u00fchren, bis die Linsen weich sind (ca. weitere 10 Minuten). Ggf. noch etwas Wasser beigeben, wenn es zu trocken wird.<\/li>\n\n\n\n<li>Am Schluss noch einen kleinen Schuss Essig unterr\u00fchren.<\/li>\n\n\n\n<li>Es darf nun keine Fl\u00fcssigkeit mehr haben. Ansonsten abgiessen. Die warmen Linsen mit den Randenw\u00fcrfeln gut mischen.<\/li>\n\n\n\n<li>Die Salatsauce herstellen und aus:\n<ul class=\"wp-block-list\">\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>3 Spritzer Zitronensaft<\/li>\n\n\n\n<li>gehackte Minze<\/li>\n\n\n\n<li>Thymian<\/li>\n\n\n\n<li>Petersilie<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Die Sauce untermischen und den Salat im K\u00fchlschrank abk\u00fchlen lassen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Alternativ zum Randen passt auch eine klein gew\u00fcrfelte Salatgurke hervorragend. Eine halbe gen\u00fcgt.<\/li>\n\n\n\n<li>Oft lass ich den Salat nicht ganz kalt werden.
