
{"id":11728,"date":"2021-05-30T21:41:45","date_gmt":"2021-05-30T19:41:45","guid":{"rendered":"https:\/\/tapas.ch\/wordpress\/?p=11728"},"modified":"2023-02-04T15:33:48","modified_gmt":"2023-02-04T14:33:48","slug":"gemuese-lasagne-mit-meiner-ersten-bechamel-und-guidalberto","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/gemuese-lasagne-mit-meiner-ersten-bechamel-und-guidalberto\/","title":{"rendered":"Gem\u00fcse-Lasagne mit meiner ersten Bechamel und Guidalberto"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p><a><strong><u>Gem\u00fcse-Lasagne<\/u><\/strong><\/a><\/p>\n\n\n\n<p>Vegi (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>300g Maisk\u00f6rner aus der B\u00fcchse<\/li>\n\n\n\n<li>ca. 400g tiefgek\u00fchlter Blattspinat<\/li>\n\n\n\n<li>400g gehackte Tomaten aus der B\u00fcchse<\/li>\n\n\n\n<li>8dl Milch<\/li>\n\n\n\n<li>30g Butter<\/li>\n\n\n\n<li>30g Weissmehl<\/li>\n\n\n\n<li>ca. 400g Lasagne Bl\u00e4tter<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li><span style=\"font-size: 1.0625rem;\">1dl Rotwein<\/span><\/li>\n\n\n\n<li>2 Essl\u00f6ffel Tomatenmark aus der Tube<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>italienische Gew\u00fcrze<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Zucker<\/li>\n\n\n\n<li>Muskatpulver<\/li>\n\n\n\n<li>150g geriebener Parmesank\u00e4se<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Den Spinat auftauen und das Wasser von Hand gut ausdr\u00fccken. Verzetteln.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden<\/li>\n\n\n\n<li>Zwiebeln und Knoblauch im \u00d6l in der Bratpfanne d\u00fcnsten.<\/li>\n\n\n\n<li>Die gehackten Tomaten zugeben und ca. 15 Minuten leicht k\u00f6cheln lassen.<\/li>\n\n\n\n<li>Dazwischen Rotwein und Tomatenmark zugeben und mit Salz, Pfeffer, kleiner Prise Zucker und italienischen Gew\u00fcrzen w\u00fcrzen.<\/li>\n\n\n\n<li>Dann den Spinat und die Maisk\u00f6rner gut unterr\u00fchren und kurz weiter k\u00f6cheln. Das ist jetzt die Sugo-F\u00fcllung f\u00fcr die Lasagne.<\/li>\n\n\n\n<li>Sauce Bechamel herstellen:\n<ul class=\"wp-block-list\">\n<li>Butter in kleinem Topf erw\u00e4rmen.<\/li>\n\n\n\n<li>Mit kleinem Schwingbesen das Mehl \u00fcnterr\u00fchren und sachte d\u00fcnsten. Es darf nicht anbrennen oder braun werden..<\/li>\n\n\n\n<li>Die Milch dazu giessen, aufkochen und mit Muskat, Salz und Pfeffer w\u00fcrzen. Ca. 10 Minuten leicht k\u00f6cheln und  und mit dem Schwingbesen permanent (!) r\u00fchren. Sonst gibt&#8217;s braune Klumpen.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Zuerst den Boden einer Ofen-Auflaufform mit Bechamel-Sauce leicht decken.<\/li>\n\n\n\n<li>Dann abwechslungsweise 1 Lage Lasagne Bl\u00e4tter und je eine d\u00fcnne (!) Lage Tomaten-Gem\u00fcse-Sugo und Bechamel-Sauce aufschichten. Total ca. 4&#8230;5 Lagen Lasagne Bl\u00e4tter. Die Lasagne Bl\u00e4tter kann man brechen, um die ganze Fl\u00e4che zu decken.<\/li>\n\n\n\n<li>Die Schichtung&nbsp; mit der letzten Lage Lasagne Bl\u00e4tter beenden und diese mit etwas Bechamel decken.<\/li>\n\n\n\n<li>Dann mit reichlich Reibk\u00e4se bestreuen.<\/li>\n\n\n\n<li>Im vorgeheizten Ofen bei 220\u00b0C ca. 25 Min. backen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die knackigen Maisk\u00f6rner sind ein guter Hackfleischersatz!<\/li>\n\n\n\n<li>Die Bechamel kann man nat\u00fcrlich auch als Pulver im Beutel kaufen und mit Milch anr\u00fchren. <\/li>\n\n\n\n<li><span style=\"font-size: 1.0625rem;\">Wenn die Lasagne am Anfang im Ofen grosse Blasen erzeugen, mit einem grossen L\u00f6ffel etwas niederdr\u00fccken.<\/span><\/li>\n\n\n\n<li>Am Ende des Backens mit Oberhitze-Grill die Lasagne sch\u00f6n braun machen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:43px\" Degu (2014er) des Guidalberto:<\/strong><\/p>\n\n\n\n<p>Eine Bordeaux Cuv\u00e9e wie die meisten Weine aus der Region Bolgheri. 60% Cabernet Sauvignon und 40% Merlot. Preis ca. CHF 39.-<\/p>\n\n\n\n<p>Das ber\u00fchmte Weingut Tenuta San Guido liegt an der toskanischen Mittelmeerk\u00fcste bei Bolgheri. Gegr\u00fcndet wurde das Weingut 1944, als der Markgraf Mario Incisa della Rocchetta die ersten Rotweinreben pflanzte. Vom Gut stammt auch der super ber\u00fchmte Sassicaia Wein.<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>klar<\/li>\n\n\n\n<li>blasses Rubinrot<\/li>\n\n\n\n<li>sauber<\/li>\n\n\n\n<li>mittlere (+) Geruchsintensit\u00e4t nach:\n<ul class=\"wp-block-list\">\n<li>rote Pflaume<\/li>\n\n\n\n<li>Zimt<\/li>\n\n\n\n<li>Toast<\/li>\n\n\n\n<li>Kaffee<\/li>\n\n\n\n<li>Schokolade<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>erste Reifenoten<\/li>\n\n\n\n<li>trocken<\/li>\n\n\n\n<li>S\u00e4ure mittel (+)<\/li>\n\n\n\n<li>Tannin Mittel<\/li>\n\n\n\n<li>Alkohol mittel<\/li>\n\n\n\n<li>mittlerer K\u00f6rper<\/li>\n\n\n\n<li>mittlere Geschmacksaromen nach:\n<ul class=\"wp-block-list\">\n<li>rote Johannisbeere<\/li>\n\n\n\n<li>Erdbeere<\/li>\n\n\n\n<li>Marmeladigkeit<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>mittlerer (+) Abgang<\/li>\n\n\n\n<li>Qualit\u00e4t sehr gut<\/li>\n\n\n\n<li>kann getrunken werden, hat aber noch Reifepotential<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n<\/div><\/div>\n\n\n\n<p><strong>Fazit<\/strong>:<\/p>\n\n\n\n<p>Die 2014er sind in der Toscana generell ein sehr problematischer (= meistens schlechter) Jahrgang. Dieser &#8222;kleine Sassicaia&#8220; hat da mal noch Gl\u00fcck gehabt. Zur Vegi-Lasagne war er der absolute Hit.
