Von da habe ich meine Erinnerungen an phantastisches Essen. Und einiges davon habe ich seither auf meiner Kochliste. Shabu Shabu kommt erst heute dazu.<\/p>\n\n\n\n<p><strong><u>Shabu Shabu<\/u><\/strong><\/p>\n\n\n\n<p>Japan (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>700g sehr d\u00fcnn geschnittenes marmoriertes Rindfleisch (z.B. Hohr\u00fccken)<\/li>\n\n\n\n<li>150g Shitake Pilze<\/li>\n\n\n\n<li>1 Chinakohl<\/li>\n\n\n\n<li>2 Karotten<\/li>\n\n\n\n<li>200g Soja\/Mungo-Sprossen<\/li>\n\n\n\n<li>300\u2026400g ger\u00e4ucherter Tofu<\/li>\n\n\n\n<li>100g Udon Nudeln<\/li>\n\n\n\n<li>Rindsbouillon (1 W\u00fcrfel pro Liter)<\/li>\n\n\n\n<li>1 Daumen grosses St\u00fcck frischen Ingwer<\/li>\n\n\n\n<li>eine kleine handvoll Pfefferk\u00f6rner<\/li>\n\n\n\n<li>1 grosser Schuss Sherry<\/li>\n\n\n\n<li>1dl Sojasauce<\/li>\n\n\n\n<li>1 grosser Schuss Reiswein (Sake)<\/li>\n\n\n\n<li>einige Spritzer Fischsauce<\/li>\n\n\n\n<li>einen Schuss ger\u00f6stetes Sesam\u00f6l<\/li>\n\n\n\n<li>200\u2026300g Erdnusssauce (Satay) im Glas oder Beutel<\/li>\n\n\n\n<li>2 geh\u00e4ufte Essl\u00f6ffel Misopaste (Sojabohnenpaste)<\/li>\n\n\n\n<li>1 grosse Tasse Reis (ca. 250g)<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Das Fleisch muss sehr d\u00fcnn geschnitten sein, ca. 1.5mm. Am besten macht das der Metzger mit der Maschine und trennt die Schichten mit Folie. Auf einem Teller sch\u00f6n pr\u00e4sentieren.<\/li>\n\n\n\n<li>Die Pilze waschen, r\u00fcsten (Stielenden wegschneiden).<\/li>\n\n\n\n<li>Bei den Chinakohlbl\u00e4ttern den dicksten Teil des weissen Strunks rausschneiden und den Rest in L\u00e4ngsstreifen schneiden.<\/li>\n\n\n\n<li>Die Karotten mit einem Sparsch\u00e4ler in d\u00fcnne Streifen hobeln<\/li>\n\n\n\n<li>Den Tofu in 2cm W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Pilze, Kohl, Karotten, Sojasprossen und Tofu in Schalen oder Tellern auf dem Tisch sch\u00f6n pr\u00e4sentieren.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Den Reis kochen und warm stellen.<\/li>\n\n\n\n<li>Den Bouillon herstellen und etwas kochen aus:\n<ul class=\"wp-block-list\">\n<li>je nach Topfgr\u00f6sse 1\u20262l Wasser (der Topf soll min. halb voll sein)<\/li>\n\n\n\n<li>fein geraffelter Ingwer<\/li>\n\n\n\n<li>1 W\u00fcrfel Rindsbouillon pro Liter Wasser<\/li>\n\n\n\n<li>eine kleine handvoll Pfefferk\u00f6rner<\/li>\n\n\n\n<li>1 grosser Schuss Sherry<\/li>\n\n\n\n<li>1dl Sojasauce<\/li>\n\n\n\n<li>1 grosser Schuss Reiswein (Sake)<\/li>\n\n\n\n<li>einige Spritzer Fischsauce<\/li>\n\n\n\n<li>einen Schuss ger\u00f6stetes Sesam\u00f6l<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Alles in einem gen\u00fcgend grossen Topf, der dann auf das Gas-Rechaud passt. Nicht schlecht ist z.B. ein Gusseisentopf (Br\u00e4ter).<\/li>\n\n\n\n<li>Die beiden Dipsaucen herstellen und im Ofen warm stellen:\n<ul class=\"wp-block-list\">\n<li>Die Satay Sauce erw\u00e4rmen und in eine kleine Schale geben und warm stellen. Ggf. mit etwas Wasser strecken. Die Konsistenz soll aber leicht cremig sein.<\/li>\n\n\n\n<li>2 geh\u00e4ufte Essl\u00f6ffel Misopaste in 4dl kochendem Wasser aufl\u00f6sen. Eine Prise Zucker beigeben. Am Tisch in kleine Schalen (z.B. Tasse) giessen pro Person.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Am Tisch die Rindfleischst\u00fccke mit Essst\u00e4bchen oder Fleischfonduegabel kurz in die k\u00f6chelnde Br\u00fche tauchen. In eine der Dipp-Saucen tippen und geniessen.<\/li>\n\n\n\n<li>Parallel dazu immer wieder Portionen vom Gem\u00fcse, Pilzen und Tofu in der Br\u00fche garen und dazu essen. Mit K\u00f6rbchen rausholen.<\/li>\n\n\n\n<li>Zum Shabu Shabu ged\u00e4mpften Reis servieren.<\/li>\n\n\n\n<li>Gegen Schluss die Nudeln kurz nach Anleitung garen (ca. 5 Minuten) und mit der Br\u00fche essen.<\/li>\n\n\n\n<li>Man kann nat\u00fcrlich auch noch anderes Gem\u00fcse nehmen, z.B. Pak Choi. Allerdings sollte es schnell gar werden \u2013 oder man kocht es vor.<\/li>\n\n\n\n<li>Es ist ein super Erlebnis das Shabu Shabu. Aber der Tisch oder die Tischdecke bed\u00fcrfen bei mir danach einer gr\u00fcndlichen Reinigung \ud83d\ude42<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:48px\" aria-hidden=\"true\"
