Ein wundermageres, grosses St\u00fcck Hirschbraten (Schnitzelfleisch) animierte mich zum ersten Wildgericht des Jahres. Ich erinnerte mich an meine Leibspeise Z\u00fcrcher Geschnetzeltes und ersetzte das Kalbfleisch einfach durch den Hirsch. Der ganze Rest wie gehabt. Das sch\u00f6ne St\u00fcck in anst\u00e4ndig grosse, aber nicht zu dicke (5mm) Scheibchen schneiden. Geschnetzeltes eben.<\/p>\n\n\n\n<p><strong>Hirsch Geschnetzeltes<br><\/strong>Schweiz (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li><span style=\"font-size: 1.0625rem;\">600&#8230;700g Hirschfleisch (geschnetzelt oder besser am St\u00fcck<\/span>)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>300g weisse Champignons<\/li>\n\n\n\n<li>Zitronensaft<\/li>\n\n\n\n<li>2\u00bd dl Kochrahm (z.B. Rama)<\/li>\n\n\n\n<li>2 dl Weisswein<\/li>\n\n\n\n<li>1 W\u00fcrfel H\u00fchnerbouillon<\/li>\n\n\n\n<li>5\u20267 Essl\u00f6ffel Maizena Express (St\u00e4rke)<\/li>\n\n\n\n<li>frische gekrauste Petersilie<\/li>\n\n\n\n<li>\u00d6l<\/li>\n\n\n\n<li>Butter<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Das Fleischst\u00fcck mit dem scharfen Fleischmesser in ca. 5mm dicke Scheibchen (geschnetzeltes) schneiden.<\/li>\n\n\n\n<li>Champignons waschen, Stielende abschneiden, trocknen und in d\u00fcnne Scheiben schneiden; mit Zitronensaft betr\u00e4ufeln<\/li>\n\n\n\n<li>Zwiebel und Petersilie klein hacken<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Das Fleisch mit Salz und Pfeffer w\u00fcrzen und von Hand einreiben. Dann in 2 Portionen kurz sehr heiss in der Bratpfanne mit \u00d6l anbraten. Nur so lange, dass sich kein Wasser l\u00f6st (ca. 3 Minuten, es soll innen rosa bleiben).<\/li>\n\n\n\n<li>Im 60\u00b0C Ofen warm stellen.<\/li>\n\n\n\n<li>Dann im Bratsatz in der selben Pfanne Butter schmelzen und die Zwiebel d\u00fcnsten. Champignons dazu geben, mitd\u00fcnsten bis sie etwas weich sind und mit Weisswein abl\u00f6schen. Wenn man viel Sauce will, noch etwas Wasser zuf\u00fcgen.<\/li>\n\n\n\n<li>H\u00fchnerbouillon, Rahm und Maizena zugeben und etwas einkochen lassen. Soviel Maizena beigeben, bis die Sauce s\u00e4mig ist.<\/li>\n\n\n\n<li>Das Fleisch und die Petersilie zugeben und nochmals kurz heiss machen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>M\u00f6gliche Beilagen wie gewohnt zu Wild: Sp\u00e4tzli, Rosenkohl, Rotkraut, gekochte Birne, Preiselbeerkonfit\u00fcre, Marroni etc.<\/li>\n\n\n\n<li>Das Fleisch kann man eigentlich nicht kurz genug braten. Je l\u00e4nger, desto z\u00e4her wird es.<\/li>\n<\/ul>\n\n\n\n<p> <\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-2 is-cropped wp-block-gallery-1 is-layout-flex
