August"},"content":{"rendered":"\n<p>Endlich wieder mal am Nationalfeiertag zu Hause. Corona sei Dank. Und warm und trocken auch noch. Also klar ein Grillabend. Einmal keine kiloschweren grossknochigen St\u00fccke,  sondern zarte Kn\u00f6chelchen mit herrlichem, saftigem Fleisch: Lamm und Huhn.<\/p>\n\n\n\n<p><strong>Alitas de Pollo (H\u00fchnerfl\u00fcgel)<\/strong><\/p>\n\n\n\n<p><strong>Zutaten<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>ca. 16 H\u00fchnerfl\u00fcgel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>1 handvoll frischer oder getrockneter Oregano<\/li>\n\n\n\n<li>6 Essl\u00f6ffel Oliven\u00f6l<\/li>\n\n\n\n<li>4 Spritzer Zitronensaft<\/li>\n\n\n\n<li>Salz (Fleur de Sel)<\/li>\n\n\n\n<li>1 voller Teel\u00f6ffel Chilipulver&nbsp;(z.B. Piment d\u2019Espelette)<\/li>\n<\/ul>\n\n\n\n<p><strong>Vorbereitung<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die H\u00fchnerfl\u00fcgel im Gelenk mit einem S\u00e4gemesser auseinander trennen, so dass ca. 32 Fl\u00fcgelh\u00e4lften entstehen.<\/li>\n\n\n\n<li>Knoblauch und Oregano klein hacken.<\/li>\n\n\n\n<li>Eine Marinade herstellen aus Oliven\u00f6l, Knoblauch, Oregano, Zitrone, Salz und Chilipulver.<\/li>\n\n\n\n<li>Die H\u00fchnerfl\u00fcgel-St\u00fccke sehr gut mit der Marinade von Hand einreiben und min. 1 Stunde im K\u00fchlschrank marinieren lassen. Zum Beispiel in einem Plastikbeutel. Gut auch \u00fcber Nacht.<\/li>\n<\/ul>\n\n\n\n<p><strong>Zubereitung<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die marinierten Fl\u00fcgel in zwei gelochten Aluminium Grillschalen bei  200\u00b0C im geschlossenen Grill allseitig gut grillen. Aber nicht verbrennen.<\/li>\n<\/ul>\n\n\n\n<p><strong>Tipp<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Warm oder kalt zu geniessen.<\/li>\n\n\n\n<li><span style=\"font-size: 1.0625rem;\">Piment d\u2019Espelette ist ein Chiligew\u00fcrz aus der Gorria Pflanze. Es wurde von Seefahrern aus Mexiko eingef\u00fchrt und in Espelette im franz\u00f6sischen Baskenland kultiviert. Im Beutel drinnen gut sch\u00fctteln und von Hand einmassieren. Min. 1h im Beutel ziehen lassen, besser \u00fcber Nacht.<\/li>\n<\/ul>\n\n\n\n<p><strong>Zubereitung<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Lamm aus dem Beutel nehmen und mit K\u00fcchenpapier abtupfen.<\/li>\n\n\n\n<li>Im geschlossenen Gasgrill bei min. 200\u00b0C je Seite 4&#8230;5 Minuten grillen. Dann indirekt noch weiter im Grill lassen (d.h. das Gas unter dem Fleisch abstellen), bis 54&#8230;56\u00b0C Kerntemperatur erreicht sind. Also am besten mit einem Grillthermometer arbeiten. Die totale Garzeit richtet sich danach, wie rosa man das Fleisch m\u00f6chte und vor allem wie dick das Rack ist. Sehr langes nachgaren ist aber normalerweise nicht n\u00f6tig.<\/li>\n\n\n\n<li>Nun m\u00fcssen die einzelnen Koteletts geschnitten werden. Dazu ist ein Fleischbeil sehr n\u00fctzlich. Zuerst die Knochen zwischen den Rippen zertr\u00fcmmern und dann mit einem Fleischmesser die Tranchen ganz zerschneiden.<\/li>\n\n\n\n<li>Den Saft etwas ablassen und nochmals kurz an die W\u00e4rme, vor allem wenn&#8217;s noch etwas zu blutig ausschaut. <\/li>\n<\/ul>\n\n\n\n<p><strong>Tipp<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die obigen H\u00fchnerfl\u00fcgel soll man zuerst grillen. Diese k\u00f6nnen problemlos an der W\u00e4rme gehalten werden.
