Aus Osteuropa. Auch wenn ich grunds\u00e4tzlich gerne einheimische Lebensmittel kaufe &#8211; hier gibt&#8217;s als Nichtpilzsammler keine Alternative. Also los und wiedermal eine meiner Lieblingspastas zubereiten.<\/p>\n\n\n\n<p><a><strong><u>Tagliatelle mit Pilzen<\/u><\/strong><\/a><strong><u><\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g Speckstreifen<\/li>\n\n\n\n<li>1 kleine Zucchini<\/li>\n\n\n\n<li>1 kleine Aubergine<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>350g Pilze (Eierschw\u00e4mme oder gemischt mit Champignons)<\/li>\n\n\n\n<li>2 Essl\u00f6ffel Tomatenmark (aus der Tube)<\/li>\n\n\n\n<li>1 Zweig Rosmarin<\/li>\n\n\n\n<li>1 Zweig Thymian<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>\u00bcl Rose- oder Weisswein<\/li>\n\n\n\n<li>\u00bcl Kochrahm (z.B. Rama)<\/li>\n\n\n\n<li>600g Nudeln (Tagliatelle)<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zucchini und Aubergine waschen und in kleine W\u00fcrfel schneiden<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden<\/li>\n\n\n\n<li>Pilze waschen, die grossen halbieren und dann mit K\u00fcchenpapier gut trocknen. Siehe Tipp.<\/li>\n\n\n\n<li>Kr\u00e4uter vom Zweig l\u00f6sen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Speckstreifen in einer Bratpfanne mit Oliven\u00f6l leicht knusprig braten.<\/li>\n\n\n\n<li>Zwiebeln und Knoblauch beigeben und goldig d\u00fcnsten.<\/li>\n\n\n\n<li>Nacheinander Gem\u00fcse und Pilze beigeben und knapp 10 Minuten mitd\u00fcnsten.<\/li>\n\n\n\n<li>Das Tomatenmark, den Kochrahm, den Zucker, die Kr\u00e4uter sowie den Wein unterr\u00fchren und ca. 10 Minuten k\u00f6cheln. Mit Salz und Pfeffer w\u00fcrzen.<\/li>\n\n\n\n<li>In der Zwischenzeit die Nudeln in Salzwasser al dente kochen und abtropfen lassen.<\/li>\n\n\n\n<li>Am Schluss die Nudeln und die Pilzsauce in einer grossen vorgew\u00e4rmten Schale untermischen und servieren.<\/li>\n<\/ul>\n\n\n\n<p>&nbsp;Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pilze waschen gilt bei vielen als ein no-go. Trotzdem mag ich es nicht, wenn in Pilzen aus fernen L\u00e4ndern im Essen dann Erde und Tannennadeln drin sind. Ich wasche sie deshalb sorgf\u00e4ltig, tropfe sie im Sieb ab (oder neueste Technik: in der Salatschleuder zentrifugieren!) und gebe sie noch eine Zeit in den 80\u00b0C Ofen zum trocknen. Venetien ist f\u00fcr mich nicht gerade eine Topregion. Viele Massenweine. Pinot Grigio l\u00e4sst gr\u00fcssen. Aber diese rote Cuv\u00e9e ist perfekt. Himmlische Fruchtnoten.
