{"id":10202,"date":"2020-08-03T20:42:13","date_gmt":"2020-08-03T18:42:13","guid":{"rendered":"https:\/\/tapas.ch\/wordpress\/?p=10202"},"modified":"2023-02-05T16:49:01","modified_gmt":"2023-02-05T15:49:01","slug":"alkoholfreier-wein-geht-das","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/alkoholfreier-wein-geht-das\/","title":{"rendered":"Alkoholfreier Wein &#8211; geht das?"},"content":{"rendered":"\n<p>Die Frage treibt mich schon l\u00e4nger um: mag ich Wein so sehr, weil er Alkohol beinhaltet und so einem je nach Menge leicht bis stark alkoholisiert. Oder ist der Alkohol eher eine negative Begleiterscheinung? W\u00fcrde ich also einen alkoholfreien Wein, der 100% so schmeckt wie der alkoholhaltige vorziehen oder mindestens gleich bewerten?<\/p>\n\n\n\n<p>Die Frage ist hypothetisch. Denn der selbe Wein mit und ohne Alkohol schmeckt definitiv unendlich unterschiedlich. Verfahren zur Herstellung von alkoholfreiem Wein gibt es mehrere. In der Literatur findet man zwei Ans\u00e4tze. Zum einen den Wein erst gar nicht zur Alkoholbildung kommen lassen. Sehr fr\u00fch ernten (wenig Zucker) und dann kalt g\u00e4ren oder ang\u00e4ren. So einen Wein habe ich noch nie gefunden. D\u00fcrfte wohl recht sauer sein. Zum anderen sind heute einige Weine erh\u00e4ltlich, die ganz normal  hergestellt wurden (inkl. Fassreife etc.) und danach der Alkohol physikalisch entzogen wird. Methoden sind z.B. Rotationsverdampfung oder vor allem Vakuumdestillation. Bei letzterer verdampft der Alkohol schon unter 30\u00b0C. So wird der Wein vermeintlich wenig belastet.<\/p>\n\n\n\n<p>Ich hab&#8216; mir nun mal einen roten und weissen des ber\u00fchmten spanischen Weinhauses Torres gekauft. Alkoholfrei. Markenname <em>Natureo<\/em>. Zuerst alles sch\u00f6n. Flasche tip-top. Farbe sch\u00f6n und klar. Trauben: Garnacha und Syrah. Sogar im Fass gereift. Nase? Da beginnt die Katastrophe. Muffig w\u00fcrde ich das mal nennen. Aber er k\u00f6nnte ja im Gaumen noch auftrumpfen. Denkste. Null S\u00e4ure. Null Tannin. Null K\u00f6rper. Null Alkohol. Na, wenigstens gute Balance \ud83d\ude42<\/p>\n\n\n\n<p>Es war wirklich eine Katastrophe. So schlecht hatte ich es mir nicht vorgestellt. Dann 100x lieber einen frischen Traubensaft. Der schmeckt wenigstens nach Frucht. Beim Saft ist wohl der Zucker der Geschmackstr\u00e4ger. Und beim Wein eben der Alkohol. Und genau der fehlende Geschmackstr\u00e4ger ist es, was den fahlen Eindruck erzeugt. Es ist wohl kein Zufall, dass beim Wein und bei Parf\u00fcms Alkohol im Spiel ist. Dieser transportiert die Aromen.<\/p>\n\n\n\n<p>So sehr ich alkoholfreies Bier mittlerweile mag und ich es kaum noch geschmacklich vom alkoholischen unterscheiden kann, so ungeniessbar finde ich diesen Wein. Und Torres ist ein Super-Weinhersteller.
